Chicken Cordon Bleu – Cooking Recipes
Ingredients
- 1/3 cup unseasoned dry bread crumbs
- 2 egg whites, beaten
- 3 ounces lean smoked ham
- 4 ounces sliced fat-free Swiss cheese
- 6 (4 ounces) boneless, skinless chicken breast halves
- All-purpose flour
- Vegetable cooking spray
Pound chicken breasts with the flat side of meat mallet until very thin and even in thickness. Layer cheese and ham on chicken, cutting to fit. Roll up chicken and secure with wooden picks. Apply chicken rolls lightly with flour; then dip in egg whites and apply in breadcrumbs. Sprinkle rolls generously with cooking oil and cook in a skillet over medium heat until browned on all sides, 8 to 10 minutes. Place chicken in baking pan. Bake at 350 degrees F, uncovered until cooked through, about 30 minutes.
